Rainy Days and Monday II

Coming from Gilbert Arizona, I must say I haven't gotten tired of the rain - yet.  I have Mary Poppins and a neck scarf to keep me dry and warm.  I have been assured by people who live here that it will be a few months before the sun ventures out here again....rain is the order of the day, unless of course it is snow. Someone said that it will reach a point where the days will be very short and what little day we have will be more like a twilight.  I can't believe it is that bad.
 

I am not the only one....little ones around here are bundled up and tucked into little carriages that attach to a bicycle.  They stay cozy and warm while being pedaled around the city.  SK and I think we ought to get one of these contraptions so one of us can ride and one pedal.....we are still arguing about who gets to ride!


For Family Home Evening tonight we watched "Ephraim's Rescue" a very good movie about the rescue of the handcart companies 160 years ago.  Someone popped popcorn and someone else fixed hot chocolate.  It's a tough mission!

We were in on the planning for November and December.  It will be a great couple of months and they are hoping to organize a couple of big activities that will bring in larger groups of YSAs.  They are hoping to have a big dinner and an activity on Friday November 29...the night after Dinner/Institute

.  I told them I am willing if the Stake President approves the funds and Ok's the activity.  I think he probably will because this is a great program with a lot of great people who are doing good things.  Elder Ballard challenged them to each reactivate someone before the end of the year, and this could be a great way to do it.  However, it will require extra effort on my part.

Let me just say that I probably sing better than I cook, so you know where I am going with this.  Is there anyone over there that would like to serve a mini-mission with me and who would like to help me cook?  Ethan?

Actually, if I ever learn to negotiate my way around a grocery store, life will be easier.  And I have all of Melissa's recipes and then some (thank you Erin, Lia, and Kate).  I am unafraid!  The perspective of age tells me that some nights may not be as great as others and we will all survive.

In the meantime, I welcome all recipes for groups that are delicious and easy and cheap.

  1. Well I've heard you sing and I've had your cooking. I think the YSA's are definitely better off having you cook than sing for them! (: I've always thought you were an excellent cook! Singing.......Well........I do love you!

    As far as recipes go, it's difficult to come up with things when it seems like the grocery stores there are so limited! No black beans, green chilis, Rotisserie Chicken, corn tortillas,or Campbell's cream soups. That takes out probably half of my recipes alone! I'll keep thinking. Hawaiian haystacks, Potato Soup, and Chli are about all I got. Do they have bagged salad? Are pot roasts too much money for that many people? How about breakfast for dinner? You could do egg casseroles and baked French toast dishes! What about something like a costa vida type salad? Did the previous couple leave a list of all the things they made? That would be very helpful! You should start keeping a food journal for the sake of those who come after!

  2. Erin...you make me laugh. We did find both black and white beans...dried...which is great. We also found green chilies in a little out of the way specialty shop. I can make cream of chicken soup but without the help of Penzey's, and as yet no corn tortillas.
    The food journal is a great idea. Haystacks are on the menu for November!

    1. Love the bakery deal (we did that at 11:00 pm - on our way home from Council Bluffs to Omaha. It was all half price or less. Did I mention that we both gained weight? A LOT?
      I can't believe you will have time for the Danish class - but if you stick it out - it will be well worth it.
      Remember that you are WAY up NORTH! The sun does not like to shine up there in the winter. Same as in Anchorage. The blessing is that it shines longer - much longer in the summer. We would go to bed about midnight - and it was still light - and the sun woke me up at 4AM.
      Have fun! (Sounds like you are doing that!) Work hard! (Doing that too!) and
      STUDY! Maybe you could learn to sing in Danish. Love & Prayers Always!

    2. I can't see that your weight gain was significant or even noticeable! But that sounds fun. I think winter in Council Bluffs would be seriously cold. I don't remember ever talking to you about Anchorage .. did you live there? Or serve a mission there? I'll bet you were an amazing missionary.
      I am going to buy myself a Danish hymnbook this week. That is a great idea. Music might really help me remember. Love to you.

  3. I have always loved your cooking--and not just your chicken patties and Mac n cheese. I think the ONLY thing dad cooks we'll is Mac n cheese. :)

    1. Melissa....you would be proud of him. He gets right in there with the peeler and the chopping knife. He hasn't reached the point of reading recipe books or watching Chef John.
