Danish Dinner and Dessert in the Desert

Derek and Kate departed for London at 5 a.m.   I got up to wish them a happy week.  I hope Derek will be able to sleep tonight....last night I think he only got a couple hours of sleep - max.  He was devouring all the information Melissa had left him on London, as well as things he researched, and trying to put together an agenda that will allow him and Kate to see as much as possible in the next 3 days.

Despite the fact that today's weather was magnificent.....not even 60 degrees with white billowy clouds set against the beautiful Danish-blue sky, SK and I spent a good amount of time today pouring over our schedules for the upcoming weeks.  We keep adding stuff and it is a challenge to make sure that we are attending to everything.  We have the end of the Institute year dinner and party this Thursday, and while I am sure that we will be making food for various and sundry events through the summer, this week's event should be the last meal we are responsible for.

I had planned on making four salads but SK went to the center for a student council planning meeting this evening, and they said one salad would be enough.  SK said we would be happy to do two.  And I am very happy to do two.  I think I have mentioned it before, but even though cooking is way down on my list of favorite things to do...cooking for these young people is one way for me to show them I love them....so I am happy to do it....even though it can be stressful.

So today has been a big planning day, as well as a record up-keeping day.  (Trying to catch up with the receipts and records of income and outflow.)  I think I would rather cook!

In the evening, Sister Hamblin and I went to Relief Society.  It is always so charming....and I love the sisters in our little branch.  There are usually fewer than a dozen of us there, and there is always a sweet feeling among us.

Our speaker was the husband of our Relief Society president.  He is a pilot from America, and he told us about how he got into that field and showed us pictures of the different planes he has flown.  He related some interesting stories related to various flights and gave us a pep talk about always wearing a seat belt (some very good reasons why!).  I was convinced, and will heretofore always wear my seat belt while I am in my seat!  He talked for well over an hour and I could have listened far longer.

We had good Danish bread, butter and jam....and cake!  I am here to tell you the bread was better than most desserts.

The one ace in the hole (as I wonder if I will enjoy American desserts ever again) is that even as you and I are pondering....Melissa is experimenting with the marzipan and Danish recipes that she took home with her......

I sense some Danish dinners and desserts are on the desert horizon.

  1. I got to be the recipient of one of Melissa's experiments on Sunday. It was wonderful! I especially enjoyed the taste of the marzipan!

  3. All of their food sounds so good. Had a friend whose mom was Danish and she
    made a creamy rice dessert with a thickened berry topping. It was SO good. She also made apple dumplings that were to die for. (Their family bought Harold B. Lee's home when he moved from our neighborhood.)
    If Melissa learns to make the Danish pastries - you will be in trouble. This cooking thing is dangerous. L&P

    1. Yes...it is dangerous! I am excited that she is hot on the trail of the Danish pastries, but I won't ask her to teach me how. Once in a great while is good enough. Apple Dumplings sound mighty fine.....and I have had that creamy rice dessert with berry topping. It is incredible. L&P

  4. Marzipan! Do you remember the time that Dad ordered an assortment of chocolates from Mrs. Cavanaugh's, and when he got home he discovered that they had mixed up his order with someone else's? Dad called it a cruel twist of fate -- there was nothing in the box but marzipan.

    Is that the same stuff you're talking about?

  5. Yes I do remember that! Your father still doesn't like plain marzipan and chocolate, but I love it. It is the very same stuff, but when mixed with other ingredients and slathered in a Danish pastry....it reaches greatness. Love you!
